Date and Nut Brittle

Serves: 1 People
|225g caster sugar|
6 tablespoons clear honey
175 g nuts, roughly chopped
(this could be walnuts, peanuts, brazil nuts etc.,)
50g stoned dates, roughly chopped
1 tablespoon butter
1 teaspoon baking powder
Put the sugar and honey into a large 3 - 4 litre microwave proof dish. cook on MEDIUM power for 5 - 6 minutes, stirring well after 4 minutes and again at the end of the cooking time, to ensure that the sugar is totally dissolved.
Stir in the nuts and dates.
Return to the oven and cook again on HIGH power for 5 - 7 minutes, or until the syrup begins to change to a golden colour.
Remove dish from the oven, stir well, then stir in the butter and baking powder until the mixture begins to foam.
Pour mixture into a 20 x 30 cm lightly greased metal tray or baking sheet.
Leave until cold, then break into pieces.
Note the power for this recipe is for a 650 - 700 watt oven. If your oven has a larger wattage output, change the cooking powers to MEDIUM LOW and MEDIUM HIGH, otherwise the sugar could burn, if cooked too quickly. It is always better to stir frequently and look at the mixture often to prevent over cooking.
