Summer Pasta

Serves: 2 People
Serves 2 – double ingredients but not cooking time to serve 4

125g  any shape of pasta

1 1/2 litres boiling water

1 teaspn sesame oil

Place the pasta, boiling water and sesame oil into a large microwave proof cooking pot,  stir well together to distribute oil.  Very carefully place in microwave oven and cook on HIGH power for 10 minutes, stirring once or twice during cooking time.

Stir again, reduce power to medium and continue cooking for a further 3 – 6 minutes, until pasta is cooked ‘al-dente’ – meaning to the tooth – so that it is cooked to taste, but not soft and soggy. 

You may need to test pasta during cooking to ensure that it does not over cook.

Drain and place on a large serving plate.


If desired, 225g chopped tomatoes,  4 chopped spring onions and 125g washed, chopped mushrooms can be stirred into pasta before serving together with 1 225g can of drained tuna fish, to make a quick summer meal.
