Harvest Potatoes

Serves: 4 People

Preparation time: 5 minutes, cooking time 15 minutes

3 large potatoes, peeled, washed and cut into small 1 - 2 cm chunks
2 tblspns milk
25g butter
1 large cooking apple, peeled, cored and thinly sliced
1 onion, peeled and sliced
25g extra butter

Put the prepared potatoes into an oven proof dish. Cover with a well fitting lid or cling wrap and cook on HIGH power for 7 - 8 minutes until soft.
Add the milk and butter and mash until smooth.
Put the apples into a small ovenproof dish, cover and cook on HIGH for 3 - 4 minutes until tender, stir well and taste. If a little sour, according to the type of apple used, 1 tablespoon of sugar may be stirred in.
Combine apple puree with potato mixture.

Place the remaining butter into an oven proof dish. Cook on HIGH power for 1 minute until it melts and begins to bubble, stir in the sliced onion. Re-cover dish and cook on HIGH for 2 minutes, Cover top of potato and apple mixture with the onion, re-cover dish. Return to the oven and continue cooking of HIGH fro 3 - 4 minutes until thoroughly cooked through and piping hot throughout.

This is a lovely vegetable and ideal to serve with pork and game dishes.
