Christmas Pudding Truffles

Serve these these lovely little truffles as an alternative to Christmas pudding. You can make them any size, they are perfect if you just want something small to eat after a heavy meal and are also a great way to use up left over Christmas pudding - not to mention the fact that they make great gifts - so save the recipe for next year!


This recipe makes approximately 24 truffles

150 gms dark chocolate
2 tblspns ginger wine, sherry or apple juice
1 - 450 gm cooked Christmas pudding
150g white chocolate

Break the dark chocolate into small pieces and put into a fairly large microwaveable bowl, heat on MEDIUM power (600watts), for 2 - 3 minutes, stirring well after each minute, until it is thoroughly melted, stir in the wine or apple juice,

While the chocolate is melting, crumble the christmas pudding, then stir in to the chocolate, a little at a time, stirring well all the time, so that all the ingredients are well combined. Take a dessertspoon full of the mixture and roll into walnut sized balls using your hands. Set each one on a greaseproof paper lined tray and when all the mixture is used, place in the fridge to harden.

Melt the white chocolate in a small bowl, in the microwave oven for 1 - 2 minutes again using a MEDIUM power, so that it does not over heat too quickly. When melted give the chocolate a thorough stir to make sure there are no lumps, then carefully drizzle a little chocolate over the top of each truffle. Return to the fridge to set. When the chocolate has hardened, transfer to a lidded container and store in the fridge until needed.
