Packet cake mix & One Minute fairy cakes

Recipe Supplied by: Jennipher Marshall-Jenkinson
Serves: 24 People
Ingredients:

1 220g packet of cake mix
2 eggs
6 tblspns vegetable cooking oil
2 tblspns water

Make up the cake mix according to instructions on the packet, use the 2 eggs and additional oil and water and add at the beginning of the beating stage.
The extra egg helps beat more air into the mixture and gives a better rise, while the addition of a little more oil helps keep the cake moist and fresh for longer

Combine all the ingredients in a large mixing bowl, then, using an electric beater, beat on a low speed for 1 minute, increase the speed and beat for 3 – 4 minutes until the mixture is smooth, light and creamy.

Pour half of the cake mixture into the well greased 18cm cake pan. Bake on MEDIUM HIGH for 2 ½ minutes. The cake may be a little sticky to touch on the top, but a skewer or sharp knife inserted into the centre of the cake should come out clean. The surface will dry out on standing.
After cooking, the cake should come away from the sides of the cooking dish easily. Allow to stand for 5 minutes before turning out on to a wire rack to cool.

Re-grease the cooking container and cook remaining half of the cake mixture in the same way.

One Minute fairy cakes:

This cake mixture is also perfect for fairy cakes that are made in moments.
Either place 6 paper fairy cake cases into a 6 slot microwavable cake pan or carefully place in a circle on the turntable of the microwave oven.

Carefully spoon a heaped desert spoonful of cake mixture into each one. Cook on HIGH power for one minute.
When cooked, the cakes should spring back when lightly pressed with a finger.
If almost cooked, cover and leave to stand for a couple of minutes to complete their cooking time.
Remove the cooked cakes from the cake pan or turntable and repeat until all the cake mixture is used up.
The mixture should make approximately 24 cakes.
