Baked Fish With Tomatoes

Recipe Supplied by: The Wave Machine
Serves: 2 People
   
1 tsp oil
1 small onion, peeled and thinly sliced
1 garlic clove, peeled and crushed
2 tbsp chopped fresh parsley or chives
350 g firm white fish fillets, skinned
230 g can chopped tomatoes
1 tbsp lemon juice
pinch of sugar
2 lemon wedges, to serve
 
 

 

  1. Tip the tomatoes into a sieve and leave to drain.

  2. Put the oil, onion, garlic and herb into a shallow dish, just large enough to hold the fish in a single layer. Cover and cook on HIGH for 3 minutes until soft. Stir well.

  3. Arrange the fish on top and sprinkle with the lemon juice.

  4. Tip the tomatoes into a bowl and season with salt and pepper. Stir in the sugar. Spoon over the fish.

  5. Cover and cook on MED-HIGH for 5 minutes or until the fish is cooked.

  6. Serve with the lemon wedges.
