Aubergine and Bacon Au Gratin

Recipe Supplied by: The Wave Machine
Serves: 2 People
1 large aubergine, thinly sliced
olive oil
4 streaky bacon rashers, finely chopped
1 small onion, finely chopped
1 garlic clove, crushed
200g can chopped tomatoes
1 tbsp tomato purée
2 tsp finely chopped fresh sage
salt and freshly milled pepper
140g grated Mozzarella cheese
  1. Lightly brush the aubergine with oil and grill until golden brown on both sides.

  2. Meanwhile, put the bacon into a medium casserole, cover and cook on HIGH for 4 min, stirring once. Add the onion and garlic, cover and cook on HIGH for about 2 min until soft. Add the tomatoes, tomato purée and sage. Cover and cook on HIGH for 3 min. Season to taste.

  3. Arrange layers of aubergine and sauce in a shallow ovenproof dish, finishing with sauce. Sprinkle the cheese on top.

  4. Cook on 200°C+MEDIUM for about 10 min or until golden brown.
