Minestrone Soup

Recipe Supplied by: Microwave Technologies Association
Serves: 4 People
125g streaky bacon, finely diced ( optional for vegetarians - instead use 25 g butter)
125 g ( 1 large potato) peeled and finely diced
1 onion, peeled and finely chopped
3 sticks celery, trimmed and thinly sliced
400g can chopped tomatoes
375 ml hot vegetable or chicken stock
1 courgette, trimmed and thinly sliced
25g very small ( soup( pasta or macaroni)
seasonings to taste

Put he bacon (or butter) and potato into a large microwaveable casserole dish. Cover with a well fitting lid and cook on HIGH power for 3 minutes. Stir well.
Add the onion, celery, tomatoes and stock and stir well. Re-cover dish and cook on HIGH for 8 minutes. Stirring once during cooking.
Stir in the courgette and pasta. Re-cover dish and continue cooking on HIGH power for 10 minutes, stirring occasionally during cooking, until the pasta is cooked through and all vegetables are tender.
Season to taste. Serve piping hot, sprinkled with croutons.
