Honey Spiced Goujons Of Salmon

Recipe Supplied by: The Wave Machine
Serves: 2 People
1 tablesp wine vinegar
1 tablesp soft brown sugar
pinch of ground ginger
pinch of ground cinnamon
1 desertspn Sherry
1 desertspn clear honey
1 spring onion(sliced)
¼ red pepper (finely chopped)
grated rind of quarter orange
4 green grapes (halved and de-piped)
125g (4oz) salmon fillet, cut into 2cm (1”) strips

 1. Place the vinegar and brown sugar in an oven-proof bowl, cook on HIGH approx 1 min to dissolve the sugar, stir well.
2. Add all the other sauce ingredients, stir well, then add the salmon strips and toss well to ensure that all the sauce coats the salmon. Cover dish with a well fitting lid or with cling film, and cook on HIGH for 2 - 3 mins.
3. Check that the salmon is cooked, tip into dish and serve as a starter with hot crusty bread for 2 or with salad or green vegetables as a main course.
