Quick Herb Salmon

Serves: 2 People

Place 2 salmon fillets or cutlets*, in a shallow oven proof dish, Spread some soft cheese** over the top, then cover with 2 tablespoons full of bread crumbs, a large squeeze of lemon juice and some freshly chopped chives or 1 roughly shopped spring onion.

Cover dish with a well fitting lid or cling wrap and cook on MEDIUM HIGH power (700 watts) for 3 - 4 minutes, until a knife inserted into the salmon comes out clean.

Leave to stand for 2 - 3 minutes, to complete the cooking time.
For a crispier top, place dish under a hot grill for 2 minutes, to brown and crisp up the bread crumbs.
Serve hot with a jacket potato and a green salad.

* trout also works well instead of salmon, but as the fillets are thinner than salmon, only cook for 2 - 3 minutes, to prevent over -cooking - it's always better to under cook, then, if not completely cooked through return to the oven for 1 minute. Leave to stand for 2 -3 minutes.
** Use medium fat soft cheese for the healthy option, and try using the flavoured varieties - like garlic and herbs for a really exciting different flavour.
