Bacon, Sprouts, and Chestnuts with Vermouth

Recipe Supplied by: Jennipher Marshall-Jenkinson
Serves: 4 People

Ingredients:
250g prepared brussel sprouts, halved if quite large
150g bacon roughly chopped
1 small onion, finely chopped
150g ready prepared chestnuts, halved
1 tbsp. chopped fresh thyme
Black pepper, to taste
1 tbsp. Dry vermouth

Method:
1. Place the prepared sprouts in a microwavable dish with 4 tbsp water, cover, with a well fitting lid or cling wrap and cook on 750W for 3-4 minutes. Remove dish from the oven.
2. Put the chopped bacon into a microwavable dish, cook for 4 minutes stirring occasionally, until crisp. If liquid comes out of the bacon, use a piece of kitchen towel to take the liquid away. Stir in the onions and cook for a further 2 minutes until soft..
3. Finally stir in the chestnuts, thyme, black pepper, to taste and the vermouth. Drain the sprouts of any excess liquid and add to the dish.
4. Cook for a further 3 - 4 minutes on 750 watts, stir after 2 minutes until vegetables are tender . Serve immediately
