Herb Mixed Vinegar

Make your own herb vinegar at the fraction of the price of the supermarket versions. Herb vinegar is delicious in salad dressings marinades etc.

1 bottle red or white wine vinegar
2-3 peeled garlic cloves
1tsp coloured peppercorns
1-2 sprigs of herbs of your own choice (rosemary always retains its shape)

1. Pour the vinegar into an old microwave jug, Microwave for 45-60 seconds until the vinegar is warm. Do not allow it to boil, as it will go cloudy.
2. Soak the label off the vinegar bottle. Place the cloves of garlic, herbs and peppercorns into the empty vinegar bottle, then carefully pour the warmed vinegar over the herbs and seal.
3. Label the bottle with an attractive label, cut a circle of brown paper large enough to tie raffia over the bottle cap.
4. Keep for 4 weeks before using to allow the flavours to mature.
