Aubergine and Bacon Au Gratin

Serves: 2 People
|1 large aubergine, thinly sliced|
4 streaky bacon rashers, finely chopped
1 small onion, finely chopped
1 garlic clove, crushed
200g can chopped tomatoes
1 tbsp tomato purée
2 tsp finely chopped fresh sage
salt and freshly milled pepper
140g grated Mozzarella cheese
- Lightly brush the aubergine with oil and grill until
golden brown on both sides.
- Meanwhile, put the bacon into a medium casserole, cover
and cook on HIGH for 4 min, stirring once. Add the onion
and garlic, cover and cook on HIGH for about 2 min until
soft. Add the tomatoes, tomato purée and sage.
Cover and cook on HIGH for 3 min. Season to taste.
- Arrange layers of aubergine and sauce in a shallow ovenproof
dish, finishing with sauce. Sprinkle the cheese on top.
- Cook on 200°C+MEDIUM for about 10 min or until golden
