Curried Chicken Casserole

Serves: 2 People
1 tbsp dry sherry
1 small onion, finely chopped
1 tbsp curry paste
1 tsp plain flour
salt and freshly milled pepper
4 large skinned and boned chicken thighs
1 medium firm banana, thickly sliced
Put the raisins and sherry into a small bowl and leave to soften.
Put the butter and onion into a casserole, cover and cook for 3 min. Stir in the curry paste and flour. Gradually stir in the milk. Cook for about 3 min, stirring frequently, until the sauce comes to the boil and thickens. Season to taste.
Arrange the chicken in a single layer in a shallow casserole, tucking the banana slices in between. Stir the soaked raisins into the sauce and spoon over the top.
Cover and cook on MED-HIGH for about 15 min or until the chicken is cooked through.
