Serves: 1 People
1 chicken breast ( approximately 200g) skinned and off the bone
a few florets of broccoli, broken into small pieces
25 g grated cheddar cheese
1 Spring onion, roughly chopped
1 slice cooked ham
  1. Pound the chicken breast between 2 sheets of greaseproof paper until thin.

  2. Mix together the broccoli, cheese and spring onion in a small bowl.

  3. Lay the pounded chicken breast on a piece of greaseproof paper 30 cm square .

  4. Place the slice of ham on the chicken and top with the broccoli, cheese and spring onion mixture.

  5. Carefully roll up the chicken breast in the greaseproof paper, ensuring that both ends are well sealed, by twisting, then tucking under the parcel.

  6. Place parcel on a microwave proof plate or shallow dish. Cook on MEDIUM HIGH for 4 -5 minutes until juices run clear when pierced with a knife.

  7. Leave to stand for 2-3 minutes before unwrapping and serving.
